Ingredients

  • 1 lb lean ground turkey breast 450 g
  • 2 cans white beans 15 oz / 425 g each; cannellini or great northern, drained and rinsed
  • 1 can diced tomatoes 14.5 oz / 411 g; no salt added
  • 2 cups low-sodium chicken broth 475 ml
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder adjust to taste
  • 1 tsp olive oil for searing
  • Salt and black pepper to taste
  • Fresh cilantro and lime wedges for serving

Method

  1. Heat the olive oil in a skillet over medium-high heat and brown the ground turkey for 4–5 minutes, breaking it apart as it cooks. This browning step builds flavor through the Maillard reaction, which the crockpot alone won’t produce.
  2. Transfer the browned turkey to the crockpot along with the onion, garlic, cumin, smoked paprika, and chili powder.
  3. Add the white beans, diced tomatoes, and chicken broth. Stir to combine.
  4. Cover and cook on low for 6 hours, or until the beans are tender and the chili has thickened slightly.
  5. Season with salt and pepper to taste, then serve with fresh cilantro on top and a splash of lime juice.
