Ingredients

  • 1 teaspoon olive oil 5 ml
  • 1/2 medium yellow onion diced
  • 1 red bell pepper diced
  • 8 oz lean ground turkey (93% lean) 225 g
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 can black beans 15 oz (425 g), drained and rinsed
  • 1/2 cup jarred salsa 120 ml

Method

  1. Heat the olive oil in a large skillet over medium-high heat. Cook the onion and bell pepper for 3 to 4 minutes, until starting to soften.
  2. Add the turkey and cook, breaking it up, for 5 to 6 minutes, until no pink remains.
  3. Stir in the chili powder, cumin, and salt and cook 30 seconds. Add the black beans and salsa and simmer 4 to 5 minutes, until thick.
  4. The turkey must reach 165°F (74°C) on an instant-read thermometer.
  5. Divide between 2 shallow freezer-safe containers. Refrigerate up to 3 to 4 days or freeze up to 2 to 3 months; thaw overnight in the fridge and reheat to 165°F (74°C).
