Ingredients

  • 4 oz whole wheat spaghetti or soba noodles 113 g
  • 1 cup frozen shelled edamame 150 g
  • 1 cup shredded red cabbage 70 g
  • 1 medium carrot shredded
  • 2 green onions sliced
  • 2 tablespoons natural peanut butter 32 g
  • 1 tablespoon low-sodium soy sauce 15 ml
  • 1 tablespoon lime juice 15 ml
  • 1 teaspoon honey or maple syrup 5 ml
  • 1 to 2 tablespoons warm water to thin the sauce

Method

  1. Cook the noodles in a large pot of boiling water according to the package directions, adding the edamame for the last 2 minutes.
  2. Drain and rinse under cold running water until cool, then drain well.
  3. Whisk the peanut butter, soy sauce, lime juice, honey, and enough warm water to make a smooth sauce.
  4. Toss the noodles and edamame with 1 tablespoon of the sauce to prevent sticking. Divide between 2 containers and top with the cabbage, carrot, and green onions. Pack the remaining sauce separately.
  5. Refrigerate within 2 hours and eat cold within 3 to 4 days, tossing with the sauce just before eating.
