Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings: 1 bowl

Ingredients

  • 3 oz cooked chicken breast about 85 g, sliced
  • 1/2 cup cooked chickpeas about 82 g, rinsed if canned
  • 1/2 cup cooked quinoa about 93 g
  • 1 tsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1 pinch salt and black pepper to taste

Method

  1. If your chicken is not already cooked, season it with salt and pepper and cook it in a skillet over medium heat until the internal temperature reaches 165°F (74°C). Use a thermometer rather than color. Rest the chicken for a few minutes, then slice it.
  2. Warm the chickpeas and quinoa together in a small pan or the microwave until steaming hot.
  3. Spoon the quinoa and chickpeas into a bowl and fan the sliced chicken on top.
  4. Drizzle with olive oil and lemon juice, sprinkle with parsley, and serve right away.

Notes

Protein and fiber values are estimates based on rounded USDA FoodData Central figures. Prep and cook times are estimates and assume the quinoa and chickpeas are already cooked.
