Ingredients

  • 3-4 pounds boneless beef country-style ribs
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons cayenne pepper
  • 1 cup barbecue sauce
  • apple wood chips optional, for smoking

Method

  1. Pat the ribs dry, trim fat caps thicker than 1/4 inch and let them sit at room temperature 45 to 60 minutes.
  2. Mix the brown sugar, smoked paprika, garlic powder, onion powder, cumin, pepper, salt and cayenne. Brush the ribs with olive oil, rub in the spice mix and rest 30 minutes.
  3. Set up a two-zone grill: about 400-450°F on the direct side and 275-300°F on the indirect side. Add soaked wood chips in a foil packet if using.
  4. Sear the ribs over direct heat 2 to 3 minutes per side until caramelized.
  5. Move the ribs to indirect heat over a drip pan, close the lid and cook 2 to 2 1/2 hours, turning every 45 minutes and spritzing with a 50/50 cider vinegar and water mix after 90 minutes, until they reach 195-205°F.
  6. Brush with BBQ sauce and grill over direct heat 3 to 5 minutes per side until sticky, adding a second coat at the end.
  7. Rest the ribs loosely covered with foil for 10 to 15 minutes, then serve whole or sliced against the grain.
