Ingredients
Method
- Heat the oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, leaving the ends hanging over the long sides.
- Mash the bananas in a large bowl with a fork or potato masher, leaving a few small lumps.
- Add the eggs and oil and whisk until smooth.
- Add the cake mix and stir with a spatula just until no dry powder remains. Do not overmix.
- Pour the batter into the pan and bake on the middle rack for 50 to 60 minutes. If the top browns too fast, cover loosely with foil after about 35 minutes. It is done when a toothpick in the center comes out with a few moist crumbs.
- Cool in the pan for 15 minutes, then lift out with the parchment and cool on a wire rack before slicing.
Notes
Banana nut variation: fold in 1/2 cup toasted chopped walnuts or pecans and sprinkle 1/4 cup more on top before baking.
Smaller box (13.25 oz): use 2 eggs and start checking 5 minutes earlier.
Nutrition is an approximate estimate per slice and depends on the brand of cake mix.
